Here's a list with all the things I have been interested in so far in my life. (Though I probably forgot some.) Some of them I participated in extensively for many years. Some are just topics of interest, meaning that I like to learn about them instead of practicing them.
Basically, I would love to know everything. Everything. Learn all the things, know all the things, do all the things. That's me. Of course that leads to a flat full of equipment and supplies, me not being very knowledgeable on any of them, and not having enough time and brain power for any of them. Big sigh.
